Cold Hand Winery’s Rancio 2017 is in the UK for the first time ever, imported by Quality Ferments and sold in several bars and restaurant, now available for you to enjoy at home!
Sunburned Ice wine made from Danish apples. The apples are harvested at optimum maturity and immediately after pressed into juice. The juice is frozen and then thawed outside at minus degrees. The frost binds the water in the juice, while sugar, acid, aroma and colour drip off like a thick sirup. The concentrated apple syrup is spontaneously fermented for 12 months. After that, the wine has been left outside in glass balloons over the summer. Here is the wine exposed to a lot of sunlight, heat and oxidation.
