Cold Hand Winery’s Malus Danica 2018 is an award-winning cryo-concentrated apple ice wine made from Danish apples of the varieties Ingrid Marie, Filippa, Elstar, Jonagold, and Belle de Boskoop. This wine marked the beginning of the winery’s fruit wine adventure.
Cryo-concentration
Produced using the cryo-concentration method: after harvest, the apples are pressed into juice and then immediately frozen. The juice is subsequently thawed outdoors at subzero temperatures, where the frost binds the water in the juice, while the sugar, acid, aroma, and colour drip off as thick raw syrup. After thawing, this concentrated “apple syrup” is slowly cold-fermented over 18 months into an intense wine. This technique is the fundamental process for all Cold Hand’s apple, pear, and quince wines.
Malus Danica perfectly balances the wonderful aroma, sweetness, and acidity of Danish apples. The scent of honey, sweet apple sauce, and fresh apple peel rises from the glass, and the taste is fresh and full-bodied.
Served chilled as a digestif
Suggested food pairings: desserts, fine cheeses, or as a delightful glass on its own. Also pairs well with charcuterie.
