Cold Hand Winery’s Cydonia 2018 is in the UK for the first time ever, imported by Quality Ferments and sold in several bars and restaurant, now available for you to enjoy at home!
Ice wine made from Danish quinces. The quinces are harvested at optimum maturity and immediately after pressed into juice. The juice is frozen and then thawed outside at minus degrees. The frost binds the water in the juice, while sugar, acid, aroma and colour drip off like a thick sirup. The concentrated quince syrup is spontaneously fermented for 18 months.
